Notes of Nougat, Praline and Pomelo

This coffee is grown by the Hunda farming community in the Letefoho area in the Northwest East Timor. This group of growers from around the Haupu village was established in 2009 and 19 members are contributing to this particular lot.

 

Coffee in East Timor is still processed in a fairly traditional way, sometimes using wooden pulping machines and very simple drying beds, but the cup quality far surpasses what one would expect from these simple and basic methods. With the help of Cafe Brisa Serena, the exporter of this lot, the farming communities working with them have received support helping them improve quality parameters such as picking, separation and even drying to help elevate the quality of the coffees.

 

We think this coffee is a great example of high cup quality this rarely available origin can produce. We love it as black filter coffee, but it works equally well with a bit of milk.
