Extra special by name, extra special by nature!
Etago Extra Special is a naturally processed lot that has been anaerobically fermented with Ava – a fungus found by the Rongo washing station manager, Flo. The fungus was eventually identified as part of the Aspergillus Oryzae family, traditionally used in Japan to make rice wines, soy sauce, miso and a plethora of other Japanese delicacies.
This fungus has now been colonised and is now used as a culture to produce all of the lots that have the tag line ‘extra special’, characterised by their enhanced sweetness and consistently high cupping scores. This coffee has a total score of 87.
Bright, juicy and fruity – this coffee thoroughly impressed our roastery team on the cupping table earlier this year and we are extremely excited to now be roasting it!
