Elixir Espresso XXXV Colombia El Diviso

The Elixir Espresso represents our quest to showcase fruit flavours in coffee; we roast light to maintain all of the delicate, complex notes the coffees have to offer. Elixir XXXIV is a testament to that – vibrantly fruity and complex, with a sweet finish.
This coffee was produced by Nestor Lasso and his brother Adrian, third-generation coffee farmers who shifted their focus to quality over quantity, improving post-harvest methods and producing micro-lots. At 25, Nestor transformed the family farm and became part of a youth movement advocating for quality and sustainability. Their coffee is now recognized globally and used in competitions.
Finca el Diviso, a collaboration between Nestor and neighbor Jhoan Vergara of Las Flores Farm, is located in Pitalito at 1800 m.a.s.l. The coffee undergoes double anaerobic fermentation: 20 hours initially, followed by 16 hours in smaller batches, before being soaked in water and leachate for 18 hours and mechanically dried.
Elixir works wonderfully on its own as espresso, but can also serve as an excellent base for milk drinks.
