The Elixir Blend represents our quest to showcase fruit flavours in coffee; we roast light to maintain all of the delicate, complex notes the coffees have to offer. Elixir XXXII is a testament to that – vibrantly fruity and complex, with a sweet finish.

Finca La Valentina, managed by Carlos Ernestor Mejia, sits at 1,600 meters above sea level and covers 25 hectares. It produces about 880 bags of coffee each year from 90,000 trees. In addition to coffee, the farm grows citrus fruits and Japanese plums. For the natural process lots like this one, the coffee cherries are fermented for three days before being dried on raised beds for 12 to 15 days.

 

Born and raised among coffee trees in Tutule, Carlos now leads the operations at CONEXH – a five-generation family business focused on specialty coffee production, with 10 farms in the Montecillos Sierra region.

 

This is the second naturally processed lot from Honduras we have sourced this year. On the cupping table this lot and the previous Elixir version (El Chollo) equally stood out, so we had to get them both. They share a similar flavour profile distinct to the region, with subtle differences that we have tried to highlight with different roast profiles. We can’t decide which one we enjoy more and are looking forward to some more coffees from Honduras next season.

 

Elixir works wonderfully on its own as espresso, but can also serve as an excellent base for milk drinks.
