Finca El Jardin is situated at 1,600 meters above sea level and has 14 hectares of coffee plantation with about 65,000 coffee trees. They also grow citrus fruits and avocados for personal use and local markets. The coffee is fully washed, mechanically depulped, fermented for about 30 hours, and then sun-dried for 12 to 15 days.

Mario is one of 40 producers who are members of CONEXH, known as “Los Compaz,” a group dedicated to producing high-quality specialty coffees. They are a five-generation family business with 10 farms in the Montecillos Sierra region.

This coffee works very well for various different filter brewing methods. We have found that using slightly higher dose than usual (70g per 1L is a good starting point) really showcases the great silky body and balanced fruitiness of this lot.
